The Taiwan Railways Administration (TRA) yesterday introduced a new boxed lunch featuring Wanluan pork knuckles, which are available at three train stations in Kaohsiung.
The idea to have pork knuckle lunches was proposed by former premier Mao Chi-kuo (毛治國) when he visited southern Taiwan, the TRA said.
Having no previous experience in making Wanluan pig knuckles, it sent staff to learn the traditional way to make the dish from chefs in Pingtung County’s Wanluan Township (萬巒), the birthplace of the delicacy.
TRA chef Chen Kuen-hong (陳昆鴻) said making the pork dish is more difficult than he thought.
“You have to remove the hairs on the knuckles the day before” they are to be eaten, Chen said.
“The knuckles need to be braised to remove [the skin] and stewed with soy sauce and other seasoning for about an hour,” Chen said, adding that the key is the sauce used to stew the knuckles.
Although the TRA sold the boxed lunches at Taipei Railway Station yesterday morning, it said that from now on, they would only be available during lunch and dinner times at the Kaohsiung and Sinzuoying stations, as well as the Zuoying High Speed Rail Station.
Only 80 pork knuckle bento boxes would be sold in each station per day, it added.
