In order to inspect the safety of food and drinks on behalf of National Chung Cheng University’s almost 10,000 students and staff, Su Fen-yu, a nutritionist on the university’s public services committee, tours the campus with her bicycle on a daily round of inspections of food and drink outlets in over ten locations. Su checks that the ingredients used comply with regulations and during the recent food safety crises, Su took preventative measures to remove and replace many products that were under suspicion. Su ensures students and staff can have peace of mind over the food and drinks they consume on campus, making her the “omnipresent” nutritionalist.
Su’s attentiveness and persistence has ensured that the university has been able to avert disaster on many occasions when a food safety incident has come to light. For example, after the plasticizer scandal, Su asked businesses to change to using glass bottles, and when there were multiple scandals over contaminated oil, even though the brands of oil used by shops on campus had not yet been singled out, Su decided on the spot to urge shop owners to lead the way in removing these brands of oil from their products. Right away, Su also persuaded businesses to use homemade pork fat. As predicted, before long the Ministry of Education had issued a notice for the removal of oil products.
On campus at National Chung Cheng University, 90 percent of businesses are to this day still using own-produced pork fat to make their products. Su’s seemingly super-human foresight has earned her the nickname, “Sorceress Su.”
