Tainan has a few items of cuisine that you cannot find elsewhere in Taiwan, such as Tainan-style Mi-kao (
Rice cakes in Tainan don't look like cakes, they are more like a bowl of rice topped with plenty of side dishes, including stewed meat sauce, stewed mushrooms, boiled peanuts, dried fish and slices of white radish. Rong-sheng's rice cakes embody the traditions of Tainan dishes -- small but delicate and with rich ingredients.

Rice and meat sauce are two essential items in Rong-sheng's rice cakes (NT$30). Starting from the Japanese era, the Kuo family selected high quality glutinous rice, first soaked it in water for two hours and then steamed it until it turned soft and sticky. As for the meat sauce, "You have to sautee the meat with scallions and garlic shreds, cool it down for two days so the meat softens and then stew it with soy sauce for at least two hours," said second-generation owner Kuo Tien-shun (
Experienced customers at Rong-sheng commonly use their chopsticks to repeatedly stir and mix the meat sauce and ingredients with the rice, so the rice fully absorbs the sauce. They then take a big bite of the rice. The stewed mushrooms taste extra rich and have a soy sauce fragrance, another plus to the rice.
"I've been coming here to eat since I was 10. The taste here is very rich and smooth and you never get tired of it," said a a 30-year-old graduate school student who gave his surname as Lin.
To accompany the rice there are fish ball and meat ball soups to choose from (NT$20). All meat balls here are home made and no preservatives are added. A bowl of rice cake plus a bowl of soup costs just NT$50. And starting last year, Rong-sheng began its rice cake nationwide home-delivery service.
As I finally slid into the warm embrace of the hot, clifftop pool, it was a serene moment of reflection. The sound of the river reflected off the cave walls, the white of our camping lights reflected off the dark, shimmering surface of the water, and I reflected on how fortunate I was to be here. After all, the beautiful walk through narrow canyons that had brought us here had been inaccessible for five years — and will be again soon. The day had started at the Huisun Forest Area (惠蓀林場), at the end of Nantou County Route 80, north and east
Specialty sandwiches loaded with the contents of an entire charcuterie board, overflowing with sauces, creams and all manner of creative add-ons, is perhaps one of the biggest global food trends of this year. From London to New York, lines form down the block for mortadella, burrata, pistachio and more stuffed between slices of fresh sourdough, rye or focaccia. To try the trend in Taipei, Munchies Mafia is for sure the spot — could this be the best sandwich in town? Carlos from Spain and Sergio from Mexico opened this spot just seven months ago. The two met working in the

Exceptions to the rule are sometimes revealing. For a brief few years, there was an emerging ideological split between the Democratic Progressive Party (DPP) and Chinese Nationalist Party (KMT) that appeared to be pushing the DPP in a direction that would be considered more liberal, and the KMT more conservative. In the previous column, “The KMT-DPP’s bureaucrat-led developmental state” (Dec. 11, page 12), we examined how Taiwan’s democratic system developed, and how both the two main parties largely accepted a similar consensus on how Taiwan should be run domestically and did not split along the left-right lines more familiar in
