Hiroshi Tanaka, president of Innovative Design and Technology Inc, electrolyzes a bottle of 2005 Beaujolais Nouveau yesterday at his laboratory in Hamamatsu, 200km west of Tokyo. Forget the oak barrels, the years of maturing, the terror-specific tastes and fragrances -- Tanaka claims to have perfected a machine that transforms young wine into mellow, 20-year-old vintage fair in seconds.
