The Council of Agriculture is promoting chicken consumption by publishing a chicken-cuisine guide featuring restaurants around the country, a spokesman said yesterday. The spokesman said the council would welcome anyone wishing to contribute information regarding restaurants known for their chicken dishes. He said local chicken had a more than 80 percent share of the market because of its quality, despite the opening up of the market to foreign competition last year. The spokesman added that local chicken is appreciated because its flavor has not been spoiled by being repeatedly frozen and thawed during its transport from slaughterhouses to consumers' kitchens.
