Over 20 million tourists entered Turkey in 2006, putting it in the top 10 travel destinations in the world. They were drawn by the clean beaches, the Black Sea, the breathtaking mountains, fascinating archeological sites and the Turkish people's reputation for hospitality.
Turkey has archeological remains dating back to 7000BC. It has been part of the Phrygian, Persian, Ancient Greek, Roman and Byzantine empires. In some places sites of significance overlap. An example of this is Ephesus, which is one of the best preserved imperial Roman cities in Europe. It is home to the Temple of Artemis, which is now reduced to ruins. Christianity's St. Paul made a famous sermon here too, much to the dismay of local vendors of silver statues of Artemis at the time!
Istanbul, the former capital, is the only city in the world to span two continents. The center of the city is in Europe and the suburbs are in Asia. After the dissolution of the Ottoman Empire in the early 20th century, different cultures were forced into close contact in modern day Turkey. The founder of the Republic of Turkey, Ataturk (which means father of the Turks) made sweeping reforms. The state became secular, moving away from the religion of the majority, Islam. Women were given voting rights, and the Arabic writing system was replaced with a Roman alphabet in just three months.
Turkish food is world famous. Shish kebab and doner kebab can be found from the streets of London to Taipei. In Turkey, lamb is a particular favorite. Breads, vegetables, yogurt, olives and cheese are also very popular.

Turks enjoy busy social lives, revolving around good friends, good food and nightlife. Nightclubs stay open until dawn and it isn't uncommon to retreat to a Turkish Bath House on the way home. The baths, known as hammams, are a blend of dry and moist heat, cold water and massage. Males and females attend separately.
In the villages, the Koy Odasi is the social center for men only, where backgammon is played, tea is drunk and hubble-bubble pipes are smoked. Although coffee was once Turkey's national drink, tea has stolen the mantle. Fresh tea is nearly always available all over Turkey, served hot in tulip shaped glasses. The tea comes from the eastern Black Sea coast. Traditional sports such as kirkpinar, wrestling in leather pants while covered in olive oil, share equal popularity with non-traditional sports such as soccer and adventure sports.

Red has been in the Turkish flag for around 700 years. Although the star and crescent are Muslim symbols, they pre-date Islam. One traditional story is that the Byzantines used the crescent as the symbol of their patron goddess, Diana. In 330 the ruler, the Emperor Constantine, dedicated the capital to the Virgin Mary, and consequently the Virgin Mary's symbol, a star, was added to the flag.

Everyone has seen a piece of fruit turn brown after being cut. Have you ever wondered why that happens? It is a common phenomenon that occurs due to a chemical reaction called enzymatic browning. The appearance, flavor and nutritional value of the fruit are all affected by this reaction. Some fruits, such as apples, pears, bananas, avocados and peaches, are more prone to enzymatic browning than others. These fruits contain high levels of an enzyme called polyphenol oxidase, or PPO for short. __1__ This causes a chain of chemical reactions that ultimately transforms the phenolic compounds into
There are several methods to prevent or slow down enzymatic browning in fruit. __3__ This lowers the pH level of the fruit tissue, causing the PPO to be far less active. Another method is to store the fruit in an airtight container or to wrap it tightly with plastic wrap. Doing this will reduce its exposure to oxygen. __4__ Although fruit that has undergone enzymatic browning may look less appealing, it is still safe to eat.
