From Nov. 10 to Nov. 12, Ruben Trincado, the head of Michelin-starred Spanish restaurant Mirador de Ulia, will helm DN Innovacion’s dinner menu.
The restaurant has earned accolades for its deft application of molecular gastronomy techniques to traditional Spanish cuisine.
Trincado’s dinner menu will include 10 courses that present his spin on culinary traditions of Donostia-San Sebastian, the city in Basque Country that is home to Mirador de Ulia. Though relatively small, Donostia-San Sebastian is known for one of the highest concentrations of Michelin-starred restaurants in the world and is host to the annual San Sebastian Gastronomika congress.

Diners will be able to taste delicacies like sardines ajoblanco (a chilled soup made from crushed almonds) with watermelon and bitter orange, squid served on an “edible mirror” and cod fish “chorizo” with egg and Iberico ham.
The main courses will be paired with Spanish wines, while dessert will include a selection of digestive liquors from Meigas Fora.
