For Chen Tu-cheng (陳塗城), the owner of Black Jar Cold Tea (黑缸涼茶) and whose family has run its herbal tea business in front of Tsehsien Temple for more than 30 years, the upcoming change is just another of the many transformations the market has seen over the decades. "This night market has always kept abreast of the latest trends, whether in food or fashion. That's why it is so unique and popular. Central management may allow us less freedom but is not going to affect our business appeal. What has stood the test of time will still thrive," Chen said.
